Blueberry Coconut Chia Pudding

This creamy pudding is healthy enough to be a breakfast, snack or dessert! Double the ingredients to make two servings.

Makes 1 large serving

INGREDIENTS:

1/4 cup milk (or milk alternative) of your choice
1/4 cup blueberry Two Good™ yogurt
OPTIONAL: 1 1/2 teaspoon maple syrup
1/8 teaspoon coconut extract
1/4 cup blueberries (cut in half if larger)
1 1/2 tablespoon chia seeds
1 tablespoon toasted unsweetened coconut

DIRECTIONS:

1. In a serving bowl stir together milk of choice, yogurt, maple syrup if desired, and coconut extract. Stir in blueberries, chia seeds and toasted coconut.

2. Cover the dish and refrigerate. After 60 minutes, stir to distribute the seeds evenly, and refrigerate overnight. Enjoy as a breakfast, snack or dessert!

Strawberry Vanilla Pancakes

Instead of stirring chopped strawberries into the batter, you can lay sliced strawberries on top of the pancakes while the first side is cooking on the griddle.

Makes 4 servings (2 large pancakes each)

INGREDIENTS:

3/4 cups whole wheat flour
1/4 cup unbleached white flour
1 tablespoons granulated sugar
1/4 teaspoon salt
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1, Strawberry Activia container (about 6 tablespoons)
3/4 cup well-shaken low fat buttermilk
1 large egg
1 1/2 tablespoons canola oil (or vegetable oil of choice)
1 1/2 teaspoons vanilla paste or extract
3/4 cups chopped fresh strawberries or 1 cup sliced strawberries

DIRECTIONS:

1. In a large bowl, whisk the flours, sugar, salt, baking powder and baking soda together. In another bowl, whisk the yogurt, buttermilk, eggs, canola oil and vanilla paste together until smooth.

2. Make a well in the center of the dry ingredients and pour in the wet mixture then stir just until they are combined. Gently stir in the chopped strawberries if desired. Let the batter sit for about 10 minutes.

3. Heat a large electric nonstick griddle or skillet over medium heat. Coat the griddle with cooking spray if needed. Using a 1/3-cup measuring cup, pour the batter onto the griddle for each pancake, using the bottom of the measuring cup to spread the batter and shape your pancake. Quickly lay strawberry slices on top if desired. Cook pancakes undisturbed for about 2 minutes and when the bottom side is golden, flip the pancakes over to cook the other side (about 2 more minutes). Repeat with the remaining batter.

SERVING SUGGESTIONS:

Serve with whipped butter or spread, powdered sugar, maple syrup, whipped cream (or non-dairy alternative) and/or drizzle melted dark chocolate over the top (melt chocolate in the microwave stirring every 30 seconds until melted).

Personalized Yogurt Bowl

Personalized Yogurt Bowl

INGREDIENTS:

Start with: 1 serving (5.3 oz) of Two Good™ Greek yogurt (flavor of your choice)

Possible Mix-ins: Natural-style nut butters, Fresh fruit, Dried fruit, Fruit purees, Fruit spreads or preserves, Canned pumpkin, Ground flaxseed, Chia seed, Spices such as ground cinnamon or pumpkin pie spice

Possible Sprinkles: Nuts, Seeds, Toasted unsweetened coconut, Whole grains (whole grain cereal, granola, hemp hearts, etc.), Crispy legumes (soy nuts, crispy chickpeas etc.), Unsweetened cocoa powder or mini semi-sweet chocolate chips

DIRECTIONS:

1. Add a serving of Two Good™ yogurt to a bowl and mix in any of your desired ingredients.

2. Sprinkle desired ingredients over the top and enjoy!

SOME YOGURT BOWL INSPIRATIONS:

· Berry Awesome Bowl—Mix a tablespoon of ground flaxseed and 1/4 cup sliced or chopped berries into about 1/2-cup of Vanilla, Coconut, Strawberry, Mixed Berry or Blueberry Two Good™ yogurt. Sprinkle 2 tablespoons walnuts and 1 tablespoon toasted unsweetened coconut over the top.

Cherry Dark Chocolate Chip Smoothie

Makes 1 large serving

INGREDIENTS:

1/2 cup any Silk Vanilla Dairy-Free Yogurt Alternative*
1/4 teaspoon vanilla paste or extract
1 cup frozen cherries (do not thaw)
1/3 cup Silk Original or Vanilla Almondmilk, Soymilk, Almond Coconut Blend (unsweetened or original)
1 tablespoon ground flaxseed/ flaxmeal
2 tablespoons bittersweet or semi-sweet chunk or chips

DIRECTIONS:

1. Add everything except the chocolate to a blender and pulse until blended and smooth. If you want the chocolate blended in, add the chocolate now and pulse for about 5 seconds.

2. Pour into a tall cup, if you haven’t added the chocolate yet, stir it in and enjoy!
